Marti’s Honey Cake

Marti’s Honey Cake

My friend Marti sent me this recipe when I was asking for coffee recipes on facebook.  I really like ginger so I substituted dried for fresh.  We also found out that this cake tastes particularly well when soaked in Kahlua 🙂

You will need:
3 C flour
1 tsp baking soda
2 tsp baking powder
1 tsp ginger
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3 eggs
1 C sugar
1 C honey
1 C Starbucks VIA Italian Roast
2 T oil
1/2 C chopped walnuts


1. Preheat the oven to 350F
2.  Mix flour, baking soda, baking powder, spices, and salt in medium bowl.
3. In a second bowl, beat eggs for 5 minutes. Add sugar gradually. Next add honey, coffee, and oil, blending well.
4. Add dry ingredients. Beat until we blended. Sprinkle nuts on the bottom of a greased 9×13 pan.
5. Bake 35-40 min.
