Coffee-Braised Beef Back Ribs
I left these cooking in the crock on low for almost 24 hours. They were insane. Cooking for 8-12 hours is plenty, I was just trying to postpone washing the crockpot. (If you’re looking for something quicker, try my Stew recipe)
You will need:
2 lbs beef ribs (I actually have no idea how much I had – whatever fits your crock!)
3 carrots cut in 2” pieces
1 tsp whole peppercorns
1 T Herbs De Provence
1 C red wine (I used Pinot Noir)
1 C Starbucks VIA Italian roast
1. Dry the ribs off with paper towels and sprinkle them with salt and pepper. Sear the ribs at high temperature to seal the juices
2. Stick ‘em in the crockpot with everything else (the liquid should just about cover the meat, so feel free to double and triple if you need to).
3. Cook in the crockpot on low for at least 8 hours, or follow my example and wait the whole day.
These go amazingly well with the BBQ sauce I made and the Coffee Baked Beans
