Coffee Baked Beans
“Real” baked beans are made with dried beans, but I was lazy and made mine with canned Pinto beans. Also, I totally overdid the molasses and then found out that adding more coffee will get rid of that metallic taste.
You can make this either on stove top and then transfer it to the oven, or cook it in the crock pot for 4-6 hours on high.
You will need:
2 cans pinto beans
1 tsp molasses
1 cup coffee (more if you mess up the molasses, haha)
1 T garlic powder
1 T Worcestershire sauce
½ T coriander seeds
Freshly ground black pepper to taste
1. Rinse the beans and combine them with the rest of the ingredients.
2. If cooking on stove top, bring it to boil, simmer for 1 hour and then transfer to 250F oven. Alternatively you can cook the beans in your crockpot on high for 4-6 hours, or on low for about 8.
