Beef Stew with Coffee
This recipe is similar to the Braised Ribs, but it cooks faster and on the stovetop, with some slight alterations in spices.
You will need:
1 – 1.5 lbs beef, cubed
2 carrots cut in 2” pieces
1 large onion, cut in chunks
2 sticks celery cut in 2” pieces
1 sprig of fresh sage
1 T coriander seeds
1 T olive oil
2-3 C of Starbucks VIA Italian roast, depending on the size of your pot
1. In a deep large pan heat up the oil. Quickly brown the beef cubes on all sides. Take them out.
2. Put in the onions, celery and carrots, and give those a quick fry. Take them out as well.
3. Deglaze the pan with coffee, add the sage and coriander seeds.
4. Add back the meat and veggies. Bring to a boil, them reduce to simmer. Cook for at least 1.5 hours.
Delicious on mashed potatoes.
