I actually love kale. I like the crunch, the taste and just about everything about it. In fact I have eaten it raw off random restaurant plates when it was meant as garnish for seafood.
But, for the rest of us, kale may be a challenging ingredient – but it’s exceptionally good for you, full of fiber, Vitamin A and Calcium.
Here is what you do.
Cut out the rough leaf spines, and chop the leaves. In a large pan, heat one tablespoon of olive oil with some red pepper flakes and chopped fresh garlic. Rinse the leaves and put them into the pan without drying – the water on the leaves will steam it.
Cover it and steam for about 5 minutes. Toss to spread the oil and garlic, sprinkle with a bit of sea salt.
